I am so excited to harvest the first pound of purple potatoes! I originally had tasted these from an Organic CSA box that came from Kilpatrick Family Farms in NY. When I was down to my last few potatoes I noticed the potatoes had started to sprout so I just threw them in the garden and thought I would see what happens... And Look!!! They are a breed called Blue Aidirondack that is an heirloom variety and sooo tasty! Kind of a cross between a sweet potato and a red potato and they are amazing when roasted with red onions and garlic.
