1 cup shredded Carrots
1 cup shredded yellow squash
1 cup shredded zucchini
1 medium red onion, shredded
1/2 tsp salt
dash pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 T flour
2 eggs
Mix all ingredients, drop by the spoonful pancake style into a frying pan on medium high and fry in olive oil, lard or coconut oil.
